Recipe: Lemongrass Tofu

My clients, friends, and followers are always asking about how I eat. I have been saying for a long time that I’d post some of my favorite recipes, so here’s the first one!

Lemongrass has so many benefits! Here are a few of my favorites:
    • Lemongrass has antioxidant properties, which can help rid the body of free radicals reducing the risk of cancer!
    • Lemongrass also can help reduce inflammation. And we all know how bad chronic inflammation is for the body!
    • Lemongrass is great at helping with digestion. Lemongrass tea is often used to soothe upset stomachs; ranging from cramping to overall vague digestive problems. Studies have also shown lemongrass to support the lining of the stomach. This defends it against common irritants such as medicines and acidic food. Therefore, it is a natural ulcer preventative!

 

With all these benefits, it’s no wonder I love cooking with lemongrass.
On top that, the soy isoflavones have been shown to help reduce hot flashes and night sweats that many women have during menopause.

Lemongrass tofu

Ingredients:

    • 1 brick organic tofu
    • 2 tbsp avocado oil(or vegetable oil of choice) if you like little spicy can use
    • 1 tbsp chilli oil and if you like test of sesame oil add them just little
    • 1 stalk lemongrass, finely chopped
    • 4 cloves of garlic
    • handful chives, roughly chopped
    • 2 tbsp spoon yellow onions chopped
    • half tbsp soy sauce
    • 1 and half tbsp oyster sauce
    • one package of Tofu soup base
    • two cup brown rice, cooked according to package directions (or rice of choice)

Instructions:

Open your brick of tofu and place between 2 paper towels to squeeze out as much liquid as you can. Pan fried it on medium-high heat until golden brown. Cut the tofu into cubes.
 
Heat 1/2 tbsp avocado oil in the pan over low heat. Next add the lemongrass, cook on low heat for 3-4 minutes. 
 
Add garlic onion, and chives and cook for 1-2 minutes.
 
Increase heat to medium-low, mix the tofu and soup base together. Then add the soy sauce, oyster sauce and tofu to the pan. Toss all together.
 
Serve over warm rice.
